JET Restalrig in Edinburgh has reopened following a six-month closure and major redevelopment, delivering a significantly enhanced forecourt and convenience offer for the local community.
The site reopened to the public on Friday 27th March with a ceremonial ribbon cutting by legendary former Hibernian FC player Pat Stanton.
He was joined by site operator Rajan Sood, his son, Kiran Sood, daughter-in-law, Sophie Ahern, as well as Paul Yates, JET Retail Account Manager, Phillips 66 Limited.Operated by Rajan Sood of RJ Fuels Ltd, the site has undergone a full transformation, with only the original canopy and external shop building structure remaining.
The redevelopment brings the site in line with the latest JET brand image, alongside a reconfigured forecourt and a completely modernised store designed to better serve local customers.
The forecourt has been fully resurfaced and upgraded, with new pumps, improved layout and additional parking, alongside new under-canopy facilities for air and screen wash.
JET ULTRA Premium Fuels have also been introduced, offering four fuel grades to motorists for the first time.
Expanded retail and food-to-go offer
Inside, the store has been fully refitted and relaunched as a Premier convenience store, supplied by Booker. While the overall footprint has only slightly increased, a complete redesign of the layout has more than doubled the retail offer, significantly improving both range and customer flow.
Food-to-go is central to the new proposition, with Fife Creamery providing hot and cold food, alongside a Stephens Bakery counter, Rollover hot food, Savage Kitchen fitness‑focused ready meals and Lavazza coffee.

This is alongside a wider convenience range tailored to local demand, as well as an on-site catering kitchen, with freshly prepared sandwiches and hot food set to be introduced.
Investment in safety and the local environment
As part of the redevelopment, the site has also invested in advanced retail and security technology in collaboration with RETaiL, supporting a safer environment for both customers and staff.
The AI-enabled system is designed to help identify suspicious behaviour, alert staff in real time and provide in-store messaging to deter theft. The site is also trialling new functionality to monitor activity on the forecourt and help address unsafe behaviour.
The operator retained existing employees throughout the closure period, with additional roles expected to be created as the expanded food-to-go offer is introduced.Commenting on the reopening, Rajan Sood, Director, RJ Fuels Ltd, said:
“This is a complete transformation of the site, and we’re really proud to be reopening and welcoming the community back. After being closed for six months, it’s been great to hear such positive feedback from local customers, particularly around the improved shop and food offer. We’ve created a space that better reflects what people want from a modern forecourt.”
Graham Clout, Retail Manager, UK Marketing, Phillips 66 Limited, added: “It’s great to see the transformation of JET Restalrig and the positive impact this investment has on serving the local community.
"We work closely with our dealers to support developments like this, combining a strong, reliable fuel offer with a recognised brand, alongside the flexibility for sites to shape their own retail proposition. Together, this is how the JET network continues to evolve to meet changing customer needs.”
The reopening was marked with a launch event, including a ceremonial ribbon cutting, with support from Booker and key supplier partners. The site is now fully open and trading, with further enhancements planned in the coming months.
