UK Retailers Tap Global Flavours to Drive Growth

The UK is one of the largest markets for meat, fish poultry, and snack flavour innovation, second only to Japan, shows a recent research.

Moguntia Food Group, one of Europe’s leading food ingredients companies with over 120 years of expertise, has released its first ever Global Taste Tracker, highlighting that the UK has launched more new meat, fish poultry and snacks than any other European country in the last year.


The UK is a leading flavour innovator, contributing 15% of new meat, fish, poultry and snacks launches across 20 key markets globally, significantly higher than Portugal, Switzerland, and Ireland (each 2%).

In the UK, meat products remain the top category up 139% YoY, while poultry is the fastest growing surging 168% YoY. Flavour is at the heart of this growth as bold yet familiar seasonings like garlic and parsley are climbing fastest in poultry, while unflavoured (now 38% of the category) are on the rise as the clean label, minimalist trends take hold.

Signature poultry flavours showing growth YoY include garlic (+5%), sage (+5%), maple (+4%) and mint (+4%), striking a balance between recognisable tastes and subtle twists to keep products fresh.

“The UK has started 2026 punching well above its weight when it comes to food and flavour innovation, particularly in snacks and protein categories”, said David Leigh, Marketing Director at Moguntia.

Globally, Japan is the ultimate flavour trendsetter with launches up 22% YoY. Fish and seafood is the fastest growing category rising 108% with core flavours such as unflavoured (+37%), grilled (+26%), and salty (+26%) driving growth YoY, while alternative flavours like cheese (+4%), shiso (+4%), and mayonnaise (+4%) are gaining traction.

In Japan, potato snacks lead in volume of flavour innovation, with flavours like consommé (+10%), cheese (+10%), truffle mushroom (+7%) and wakame (+7%) showing strong YoY growth.

“What we’re seeing is a shift towards more layered flavour profiles, combining familiar tastes with something more distinctive.

“Trends from Japan like wakame, an umami-rich seaweed and consommé, a deep, savoury seasoning, show how more complex tastes are gaining traction and could offer inspiration for retailers and food businesses in the UK.

“By spotting emerging flavours and fast-growing categories early, our customers can stay ahead by developing products that truly connect with consumers” said David Leigh, Marketing Director at Moguntia.

Moguntia’s Global Taste Tracker reviews 20 markets across meat, fish, poultry, and snacks, assessing new product launch volume, YoY category growth, and each category’s share of a country’s total food and beverage launches to create a ranking.

It then identifies the top performing countries and emerging flavour trends, highlighting key innovation themes and the flavours driving growth in each category.

With six sites across Europe and almost €200m in sales, last year Moguntia Food Group announced the expansion of its UK site in County Durham and plans to create 80 new jobs. The firm also recently launched a new global brand platform “Taste the power of food” to drive recruitment.
