    Shortbread Day in focus as traditional bake enjoys strong growth

    Bakers across the country is celebrating National Shortbread Day today (6 January) as the traditional bake is enjoying solid growth.

    Figures released by CSM Bakery Solutions reveal that shortbread is one of the biggest growing biscuits in the category, growing 16.8 percent in value year on year.

    “Shortbread has seen a resurgence over the last year and we expect this trend to continue into 2020,” said Holly Wales of CSM Bakery Solutions, a leading provider of bakery ingredients, products and services for retail and foodservice markets.

    The latest data has also revealed that more people are buying the varied biscuit more often beyond the festive season, the firm added.

    Shortbread can be used for decorated cookies, choc chip, traditional Scottish shortbread, as mini bites, or to create the hugely popular Millionaire or Billionaire shortbread.
